Serves: 4
Add mixed greens salad and you have lunch.
  • ½ cup THRIVE Ham TVP
  • ½ cup water
  • 2-3 large baking size russet potatoes or 2 cups frozen hash brown potatoes (thawed)
  • 3 green onions chopped, snip top greens for garnish
  • 1 Tsp Garlic powder
  • ½ Tsp Thyme
  • ½ Tsp Marjoram ( 1 Tsp Herb de Provence, if you have it)
  • 1 Grind of coarse black pepper
  • ½ cup cheddar cheese (or goat cheese)
  • 2 TBS Olive Oil
  • 1 Grind of coarse black pepper
  • ¼ Tsp Dill
  • ½ cup sour cream
  1. Rehydrate Ham TVP in ½ cup water. Line colander with paper towel and drain. Make sure to thoroughly dry. Squeeze out excess water. Set aside.
  2. In bowl combine potatoes, green onion, spices, cheese, egg powder.
  3. Add drained Ham TVP.
  4. Heat non-stick skillet and add oil.
  5. Divide potato mixture and form four potato cakes. Press down firmly with spatula. Tidy edges until nice cakes form.
  6. Wait until edges are brown and center is firm. Turn. Tidy edges. Allow to brown well on this side as well.
  7. Garnish with snipped tops of green onion, top with spoon of sour cream and a sprinkle of dill.
Whole Russet potatoes may be grated by hand or shredded in food processor with attachment. Very important not to fiddle to much with cakes until brown and crispy on bottom or they will fall apart. Turn heat down to medium if concerned about burning. Wait for firm crust to develop before turning. Try THRIVE Sour Cream powder from the pantry.
