THRIVE Christmas M&M Cookies

These M&M cookies, a Christmas favorite in our house were delicious and they were made with THRIVE Shortening Powder.  I wondered if I could take a family favorite and make it  THRIVE.  These passed with flying colors!

I use food processor to make cookie dough.  I find it saves time an makes for less messy kitchen.  These go really fast.  You can make extra batches in food processor and freeze for later use.  You can certainly do these by hand.  Do allow time for creaming process of fats and sugars to correct consistency.  Mixture should be light lemony yellow glossy and not grainy before the addition of flour and remaining dry ingredients.  Do not over beat or you will have tough cookies.

M&M Cookies made with shortening powder from THRIVE.
Ingredients
  • 1 cup THRIVE shortening powder
  • 1 cup THRIVE brown sugar
  • 1 cup THRIVE white sugar
  • 2 large eggs
  • ¼ cup water
  • 2 teaspoons pure vanilla extract
  • 2½ - 3 cups THRIVE all-purpose flour
  • 1 teaspoon THRIVE salt
  • 1 teaspoon THRIVE baking soda
  • 12 oz M&M candies
Instructions
  1. Preheat oven to 350 degrees.
  2. In bowl of food processor add shortening powder, brown sugar, white sugar, eggs, water, and vanilla.
  3. Process on dough cycle. Cream for 2-3 minutes.
  4. Add dry ingredients.
  5. Add additional flour if needed.
  6. Process. Dough is ready when it pulls away from sides of processor and is not sticky.
  7. Stir in M &M candies by hand.
  8. Drop balls by tablespoon full onto nonstick sprayed baking sheets.
  9. To aid spread, gently flatten balls.
  10. Press additional candies onto tops for decoration.
  11. Bake for 7-10 minutes
